The Biggest Mistakes a Beginner Baker Can Make, According to Elizabeth Chambers

Baking is not an easy discipline. While there are baking tips every home cook should know to solve some common problems, baking will always be a messy task that punishes mistakes. Baking has all kinds of pitfalls to avoid, from avoiding glass dishes when baking a cake, to not trusting baking powder added to boxed cake mix, to the many mistakes you should avoid when baking cookies.

Luckily, professionals like Elizabeth Chambers, CEO and founder of BIRD Bakery, have advice for those just getting into baking. What he suggests isn’t particularly complex, but it’s important: take your time and follow the instructions as strictly as possible. Chambers tells Daily Meal that “at the end of the day, baking is science” and the most important thing is to not deviate from the recipe and be exact when it comes to measurements.

There’s a reason why, as Elizabeth Chambers says, baking is considered a science. (And as the old saying goes, cooking is considered an art.) In many cases when cooking, if you make a mistake, you can pivot and find a way to save the day, like trying these solutions before throwing out the browned butter. Not so with baking, where if you make a mistake during the measuring process, you will practically be trapped in that error and may have to start over from scratch.

Therefore, Chambers recommends following some tried-and-true tips when it comes to baking that will help you keep your technique precise. She assures new bakers that doing so will lead to good results, saying, “If you follow the instructions, measure (and) weigh correctly, don’t overmix the gluten (flour), and keep the butter and dairy at the correct temperatures. You’ll be fine!” golden!” So don’t wing it when baking and (hopefully) everything will work out.
